Vegan Quiche

Serves: 4-6 servings
- - 1 vegan pie crust
- - 1 onion, diced
- - 1 bell pepper, chopped
- - 1 zucchini, chopped
- - 2 c. spinach
- - 1 package organic firm tofu, drained
- - ½ c. veggie stock
- - 2 tbsp. cornstarch
- - ½ c. nutritional yeast
- - ½ tsp. garlic powder
- - ½ tsp. salt
- - ¼ tsp. turmeric
- - Salt and black pepper, to taste
- Preheat oven to 375F.
- On medium-high heat, sauté the onion, bell pepper, zucchini, spinach. Season with salt and pepper to taste. Set aside the veggies in a large bowl.
- In a food processor, blend tofu, stock, cornstarch, nutritional yeast, garlic powder, salt, turmeric, salt, and pepper together until smooth.
- Add the tofu mixture to the sautéed veggies and fold together.
- Add the mixture to the vegan pie crust.
- Bake for 45-50 minutes or until the top is golden.
