Vegan Quiche

Ingredients
  • - 1 vegan pie crust
  • - 1 onion, diced
  • - 1 bell pepper, chopped
  • - 1 zucchini, chopped
  • - 2 c. spinach
  • - 1 package organic firm tofu, drained
  • - ½ c. veggie stock
  • - 2 tbsp. cornstarch
  • - ½ c. nutritional yeast
  • - ½ tsp. garlic powder
  • - ½ tsp. salt
  • - ¼ tsp. turmeric
  • - Salt and black pepper, to taste
Instructions
  1. Preheat oven to 375F.
  2. On medium-high heat, sauté the onion, bell pepper, zucchini, spinach. Season with salt and pepper to taste. Set aside the veggies in a large bowl.
  3. In a food processor, blend tofu, stock, cornstarch, nutritional yeast, garlic powder, salt, turmeric, salt, and pepper together until smooth.
  4. Add the tofu mixture to the sautéed veggies and fold together.
  5. Add the mixture to the vegan pie crust.
  6. Bake for 45-50 minutes or until the top is golden.
