Lemon Dill Tahini Buddha Bowl

Ingredients
  • BOWL
  • Roasted veggies of your choice*
  • 1 c. brown rice, uncooked
  • DRESSING
  • 2 tbsp tahini
  • Juice of 1 lemon
  • 1 tbsp. maple syrup
  • ½ tsp. dill
  • Zest of ½ a lemon
Instructions
  1. For the rice: In a medium pot, add the rice along with 2 c. water. Increase heat to high and bring to a low boil. Immediately reduce the heat to medium-low, and cover with a lid. Cook for 20-25 minutes, until the water is absorbed and the rice is fluffy. Remove the lid and season the rice with salt and pepper.
  2. For the dressing: Add all the ingredients in a small bowl and whisk to combine.
  3. Assembly: Put rice into a bowl, add on roasted veggies, and drizzle on the dressing!
Notes
* I used red peppers, green onion, sunchokes, and carrots. To roast veggies, preheat oven to 375F. Toss veggies with melted coconut oil (or olive oil), salt, pepper, and lay them on lined baking sheet to bake for 35-40 minutes.
