  • ⅓ cup melted coconut oil
  • 2 tbsp maple syrup
  • 2 tsp pure vanilla extract
  • ¼ cup coconut sugar
  • ½ cup oats
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • 1½ tsp ground cinnamon
  • 1½ cup unbleached all purpose flour
  • ⅓ cup vegan chocolate chips
  • 5 large fresh figs, cut into halves
  • ¼ cup almonds, roughly chopped
Instructions
  1. Preheat oven to 350°F and line a 8-inch square pan with parchment paper.

  3. In a small mixing bowl, roughly mix together the dry ingredients (coconut sugar to flour).
  4. Add the dry ingredients to the wet ingredients and using a spatula, mix until just combined. Fold in the chocolate chips and transfer batter to prepared pan.

  6. Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool on a cooling rack for at least 15 minutes before cutting and serving. Store leftovers in a sealed container for up to 1 week in the refrigerator. Best enjoyed reheated for a few minutes in the oven.
