Pumpkin Spice LaraBars

Ingredients
  • BARS
  • 2 c. almonds, toasted
  • ½ c. oats
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ¼ tsp. ginger
  • 18 dates, pitted
  • 3 tbsp. pumpkin puree
  • TO GARNISH
  • Melted dark chocolate
  • Almond butter
  • Extra nuts
Instructions
  1. Line a regular loaf pan with parchment paper.
  2. In a food processor, add in almonds, oats, cinnamon, nutmeg, and ginger. Pulse until mixture resembles a crumble.
  3. Add in the dates and pumpkin puree to the dry ingredients and pulse some more until mixture begins sticking together. The mixture should be dry enough so that it doesn't stick to your hands when you touch it, but wet enough that it comes together like a dough.
  4. Transfer the bars into the loaf pan and chill in the fridge until firm.
  5. Once firm, cut into bars and drizzle with melted chocolate and almond butter. Top with additional nuts and cinnamon if desired.
  6. Store bars in the fridge for up to 1 week.
